Ingredients

Scale
  • 1 pound ground turkey

  • 1 cup frozen peas

  • 2 carrots

  • 2 small celery sticks

  • 2 cups canned chopped tomatoes

  • 1 medium-sized white onion

  • 2 garlic cloves

  • 1 bunch of fresh thyme

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon sugar (optional)

  • 2 tablespoons Worcestershire sauce

  • 2 teaspoons butter

For the mashed potatoes:

  • 4 medium-sized potatoes

  • 3 tablespoons butter

  • 1 teaspoon salt

  • 1 cup shredded mozzarella

  • 1 teaspoon salt

  • 1 teaspoon black pepper

Instructions

  1. Prep the veggies:

  • Peel and chop finely the onion.

  • Peel and mince the garlic cloves.

  • Peel and dice finely the carrots.

  • Chop finely the celery.

  • Peel and chop the potatoes.

  1. Boil the potatoes with enough water until soft.

  2. In a pan with one tablespoon of butter cook the minced garlic and the chopped onion. Season with a bit of salt and let cook until soft and fragrant.

  3.  Add the carrots and the celery and cook for additional 5-7 minutes on medium heat.

  4. Add the ground turkey meat to the mix and season with salt, pepper, rosemary, and salt. Cook until browned, making sure to break any big lumps it might form.

  5. Add the tomato puree and the Worcestershire sauce to the pan and mix well. Let cook for 10-15 minutes. Taste and if too acidic add a tablespoon of sugar.

  6. Prep the mashed potatoes:

  • In a big bowl add the drained boiled potatoes.

  • Add the butter, salt, pepper, and shredded mozzarella.

  • Mash everything together with the help of a potato masher.

  1. Fill the baking dish with a layer of cooked meat and veggies, and spread evenly.

  2. Cover with a layer of cheesy mashed potatoes.

  3. Make lines with a fork (for decoration and crispiness)

  4. Bake in the oven for 12 minutes until the mashed potato top is golden.

Notes

This recipe can be done with the ground meat of choice, chicken, turkey, beef or pork, or even lamb (with very delicious results!)

Adding a bit of sugar to the tomato will balance out the acidity. If you don’t have Worcestershire sauce, don’t worry just skip it, but if you can, add it since it will amp up the flavor. Another option is to add ½ cup of brandy or cognac and let boil.

Leftovers can be kept in the fridge in sealed containers for up to a week.
