Easy and super delicious sheet pan beef quesadillas. Juicy, full of flavor, and of course super cheesy!
1 pound ground beef
3 cups shredded cheddar cheese
1 cup canned diced tomatoes.
2 teaspoons olive oil
1 white onion
a bunch of fresh cilantro
2 garlic cloves
1 ½ teaspoons salt
1 teaspoon black pepper
1 teaspoon taco seasoning
1 teaspoon chili flakes
8 flour tortillas
Peel and dice finely the onion. Peel and smash or mince the garlic cloves.
In a pan, add the olive oil and cook the garlic cloves and the onion with a bit of salt and seasonings. Cook until soft, golden, and fragrant.
Add the minced meat to the pan and add the seasonings. Cook until it gets evenly browned breaking any big lumps it might form.
Add the canned tomatoes and the fresh cilantro (chopped) and let cook for 10 minutes on medium heat.
Cover the sheet pan with the flour tortillas overlapping them but also leave enough of them to flap and close the quesadillas when filled.
Put a layer of shredded cheddar cheese, ad the cooked filling on top, and distribute it evenly.
Add another layer of shredded cheddar cheese.
Close the quesadilla folding the flour tortillas.
Cook in the oven (preheated) at 374 for 10 minutes.
Portion and serve alongside some guacamole.
This recipe can be done as well with chicken or turkey meat, also, feel free to change the cheese and use the one of your choice.
This sheet pan beef quesadillas are better eaten right after being made but if there would be any leftovers, store them in the fridge in a closed container for up to 5 days.
