Some days, it’s just so hot that you really want a popsicle for breakfast. Heck, even if it’s not hot, you may want a popsicle for breakfast!
I’m all for choice and eating what you crave. But sometimes you also need nutrients to sustain you for a couple of hours, and a frozen stick of sugar is likely to not achieve sustenance for you.
That’s why I made these delicious yogurt parfait breakfast pops! Not only do they taste amazing, but they also provide you with fiber, protein, and healthy carbohydrates to give you a little more lasting energy. They’re also made with good-for-you ingredients like Greek yogurt, real whole fruit, and granola. Yum!
I used strawberries and peaches to make these yogurt parfait breakfast pops, but you can use any type of fruit that you like, either fresh or frozen. Blackberries, blueberries, cherries, mangoes, you name it, you can use it in these yummy pops. I used some homemade honey almond granola as well to keep them healthy and simple, but you can use any kind of granola that you like.
Yogurt parfait breakfast pops are easy to grab on your way out the door in the morning or to enjoy as an afternoon snack on your patio. They hit the spot when you want a sweet and frosty treat that is also healthy and nutritious.
Not that you need permission from anyone to enjoy a popsicle for breakfast, but you can now officially eat popsicles for breakfast!

Ingredients
- 1/2 cup diced strawberries
- 1/2 cup diced peaches
- 2 tbsp water
- 1 cup vanilla Greek yogurt
- 1/4 cup milk of choice
- 1/2 cup granola*
Instructions
- In a small saucepan, heat strawberries with 1 tbsp water, stirring occasionally, until strawberries are reduced down and syrupy. Remove from pan and repeat with peaches. Let fruit cool.
- Mix yogurt and milk.
- Pour a small amount of yogurt mixture into the bottom of popsicle molds. Layer with fruit and granola. Tap the mold on the counter to release any air bubbles. Repeat layers.
- Insert popsicle sticks and freeze for 6 hours or overnight.
- Run warm water over the outside of the mold to release popsicles. Enjoy!
