Less than a year ago, when I was counseling clients in a corporate wellness setting, I just couldn’t understand why people didn’t want to cook their own meals. After all, cooking at home is one of the biggest steps toward eating healthier. Why couldn’t everyone just be like me and cook dinner from scratch every night? I mean, come on people, it’s not that hard, right?
HAHAHA. Fast forward to a new baby and a husband starting a full-time job on top of his side job, and I suddenly get it. But I still think cooking and eating at home is the best way to eat more nutritious meals. You may have noticed that a lot of my recipes are much simpler these days, reflecting my busy life as a new mom. I need meals that are simple and quick.
But at the end of the day, I still want to cook dinner with a glass of Starborough Sauvignon Blanc in hand. Cooking with a glass of wine has always been one of my favorite ways to end the day, so I want to make sure I keep this ritual.
That’s why I’ve been loving this recipe for chili butter shrimp and zoodles. It’s got only 5 ingredients and is super easy to prepare. It comes together in 10 minutes and pairs perfectly with one of my new favorite wines: Starborough Sauvignon Blanc.
I also love that I usually already have most of the ingredients for this quick dinner on hand. It makes it easy to run by the store and pick up some shrimp and zucchini with a bottle of wine, so I don’t have to remember a laundry list of groceries (because #mombrain).
The original recipe calls for 4 tbsp of butter, but I usually just use 2 tbsp. Buy your shrimp already peeled and deveined to make the prep work even easier.
