Have you tried matcha yet? If not, it’s time! I used to be a little weary of it (What is that green powder?), but after trying it, I loved it! It may have something to do with all of those antioxidants (it has 137 times the antioxidants of regular green tea)!
Living in Dallas, it was fairly easy to find matcha if you looked in the right places, but since moving back out to west Texas, it’s not too common here. I did a quick internet search and there are tons of brands of matcha for sale. But which to get? I’d seen warnings of un-pure and incorrectly sourced matcha that definitely don’t give you your moneys worth. How would I ever decide which one to buy?
Luckily, I was given the opportunity to try Lively Matcha by the founder, and I’m so glad I did! I’ve been enjoying the smooth, luxurious taste of their ceremonial matcha in almond milk lattes in the afternoons, and they are just so darn good. These popsicles combine all the goodness of matcha with the tropical flavors of coconut and fresh pineapple. They’re super simple to make, naturally gluten free and vegan, and they’re perfect for keeping you cool this summer. They taste like a little bite of paradise, but with way more antioxidants!

Tropical Pineapple Coconut Matcha Popsicles are the perfect cool treat on a hot day!
- 1 cup fresh pineapple, divided
- 2 cups light coconut milk
- 2 tsp Lively Matcha
- 1 tsp honey or agave
- Shredded coconut (optional)
- Cut pineapple into small cubes (about 1/4 inch across).
- In a blender or food processor, combine 1/2 cup of the pineapple, coconut milk, matcha, and honey. Blend until smooth. Stir in remaining pineapple.
- Pour mixture into popsicle molds and add sticks. Freeze 4 hours or until frozen.
- When pops are frozen dip into additional coconut milk and then into shredded coconut (optional).
